[Cook] Chinese Red Cooked Pork Ribs

There's a great sale on pork spareribs for $1.47/lb. I was able to buy a 5+ lb full rack for only $7.63. My mom makes the best Chinese "red cooked" pork ribs. So I called my mom to get her recipe. Mom told me all the ingredients that goes into the braising sauce, but she wasn't sure about the amount because the way she cooks is by her "feeling" so she never measures anything. I did my best to figure out the correct proportion for everything. It turned out PERFECT! It tastes exactly like my mom's!


Chinese Red Cooked Pork Ribs

I started cooking at 9am. The ribs finished right on time for lunch. This was my version of Memorial Day's salad, ribs, and corn.




A huge rack of spareribs! It's a little over 5 lb.



Cut the ribs into individual rib. I also separate the top part with cartilages.



Get a big pot of boiling water, and cook the meat briefly in it. A lot of "dirty" grey little things will come out of the bones and meat. Pre-cook the ribs in boiling water will make the braising sauce come out "clean" without the little bits of "grits". Rinse the ribs with water afterward.



Here are the ingredient for the braising sauce:

  • 1 cup of soy sauce

  • 8 cups of water

  • 1/2 cup of rice wine

  • 1/4 cup of rice vinegar

  • 1 tablespoon of sugar

  • 1 head garlic, crush each clove


My mom also adds green onion, but I don't have any at home. You can also add some sliced ginger.



Use high heat until the sauce boil, add the ribs and turned down the heat. Once it starts boiling again, turn the heat to low. Cover and cook for about 3 hours. Your house will smell really really good so you'll be very hungry for 3 hours.



The meat will be so tender and flavorful when it's done!


Peppers and Avocado Salad

The side salad was made with 1 chopped green pepper, 1 chopped red pepper, 1 chopped avocado, some crumbled feta cheese, and Italian salad dressing.  For the corn, I just cooked it in boiling water, then seasoned with some sea salt.



For dinner, we had the ribs again. But this time, it's Chinese style meal with rice.



When the sauce was left in the refrigerator for a few hours, the fat will solidify as a white layer on top. Get rid of that fat layer, then you can use the braising sauce to cook other things. I like to pour a few spoonful of the sauce over my rice. So good that way!


Sauteed Asparagus

The veggie for dinner was sauteed asparagus. Heat up some olive oil in a pan, add minced garlic, cook for a minute, then add asparagus, saute for a few minutes, then add some of the braising sauce and a little bit of salt. It was yummy.



Teddy and Twinkle also thought the ribs smell divine. They kept on staring at us hoping to get some ribs while we were eating. Awww.... They didn't get any ribs because no garlic for dogs. But they got some doggy cookies because they were so good and didn't bug us when we were eating. They just patiently waited. Good puppies!

The ribs sale is still going on at Stater Bros. If you have a store nearby, hurry up and go get some. Then you can make this delicious rib recipe at home, too! :-)
