This pita sandwich was super easy and fast to make for a healthy and delicious lunch.
Turkey-Hummus Pitas
1/2 cup store bought hummus
2 whole-wheat pitas, cut in half
8 ounces thinly sliced deli turkey breast
1 tomato, sliced
1/4 cup crumbled feta cheese
1 cup baby spinach leaves (optional)
1. Spread 2 tablespoons hummus in each pita half. Fill each pita with 2 ounces turkey, sliced tomato, 1 tablespoon feta cheese, and 1/4 cup spinach, if desired.
Yield: 4 servings
