[Cook] Feta-Beef Patties with Cucumber Sauce

Dr. P said this was the best beef patty he's ever had. I don't want to be conceited, but it was pretty damn good. haha.... And it was so easy to make with just a few ingredients. I served it with salad and pita bread. But of course you can serve it with hamburger buns with lettuce, tomato and onion.

Feta-Beef Patties with Cucumber Sauce

1 lb ground beef
1/4 cup crumbled feta cheese
1 teaspoon dried oregano
2 garlic cloves, minced
1/8 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped cucumber
3/4 cup sour cream
1 teaspoon chopped fresh dill
1/2 teaspoon red wine vinegar

1. Combine beef, feta cheese, oregano and garlic in a bowl. Divide beef mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.

2. Heat a large nonstick skillet over medium-high heat. Add patties; cook 4 minutes. Turn patties over; cook 4 minutes or until done.

3. While patties cook, combine salt, pepper, cucumber, sour cream, dill and red wine vinegar in a small bowl. Serve with patties.

Yield: 4 servings
