[Cook] Chicken Noodle Soup

I love Costco's rotisserie chicken. We often eat 1/2 chicken on the day we buy it. Then I'll cut the meat off the bones, and use it to make fried rice, tacos, stir-fried dishes, scrambled eggs... etc. There are so many things you can do with cooked rotisserie chicken! And do not throw the bones away! I always use the bones to make chicken soup. The soup is easy, fast, nutritious, and tastes good. One night I made chicken noodle soup with leftover bones in 20 minutes.


Chicken Noodle Soup

Rotisserie chicken bones
Water
Asian style noodle
Chicken meat
Green leaf vegetables
Eggs
Green onion, chopped
Cilantro, chopped
Salt
Pepper

[Cook] Spaghetti with Cauliflower

I love cooking. I like cooking from scratch with fresh produce and meat. But sometimes when I am short on time, I'm glad we have a Trader Joe's near us. Trader Joe's semi-prepared food is really convenient to make a quick and easy meal.


Spaghetti with Cauliflower

I made Spaghetti with Cauliflower. Trader Joe's was serving Lobster Ravioli at the food sample counter. I really like the sauce they used, and the lady at the counter told me how she made it. I decided to add cauliflower to the spaghetti. It might sound like a weird combination, but it turned out pretty tasty.

[Cook] Orecchiette with Sausage and Roasted Peppers

Another recipe from Everyday Food: Great Food Fast. I always bought roasted peppers in a jar before. Never knew roasting your own peppers was that easy. And it tasted sooooo much better than the jar ones. Also it's a lot cheaper to make your own. I will always make my own roasted pepper from now on. This pasta recipe is so easy to make. It's simple, but full of flavor. The savory and rich sausage goes so well with sweet roasted pepper.


Orecchiette with Sausage and Roasted Peppers

Freshly roasted peppers give this hearty pasta a smoky taste. If you like, you can use jarred peppers, thinly sliced, instead of making your own, and skip step 1. To skin the peppers, char them and then cover tightly with plastic wrap. This will produce steam and make the skins come off easily.

Prep Time: 20 minutes
Total Time: 40 minutes
Yield Serves: 6

[Cook] Pasta Prima Grilled Chicken & Mozzarella Ravioli

This was our semi-homecooked lunch yesterday. Pasta Prima Grilled Chicken and Mozzarella Ravioli was purchased from Costco. I like this all natural ravioli. The inside was filled with lean ground chicken.


Pasta Prima Grilled Chicken & Mozzarella Ravioli

I cooked the pasta in boiled water for about 8 minutes. While the pasta is cooking, I sliced up some fresh mushroom, and sauteed in a pan with a little bit of olive oil. When mushroom is done, I added the sauce. The sauce I used was Bertolli Garlic Alfredo sauce. When sauce was heated through, pasta was done, just toss everything together. Add some shredded parmesan cheese. Done! (I wish I had some parsley to add some color though.)

[Cook] Chicken Cream Cheese Pasta

I got a coupon to get a free new Philidephia Cooking Creme. I used some leftover chicken and veggies, and spaghetti from my pantry to make Chicken Cream Cheese Pasta. The seasoned cooking creme cheese as a pasta sauce was pretty good. This meal is so simple and fast because of the cream cheese.


Chicken Cream Cheese Pasta

You can make it with pretty much anything you want. Some protein and some veggies would do. I used chicken, snow peas and spinach. Also you can use any kind of pasta you like.

[Cook] Pho Bo Beef

I bought this app called The Photo Cookbook on iPad ($4.99). There were 80 recipes with detailed photos on each and every step. All the recipes are quite easy and fast to make. The photo of each ingredients and all the steps help a lot. The first recipe I tried from this app was Pho Bo Beef. I never thought I could make pho at home. Turned out it wasn't as hard as I thought.

Because of copyright, I won't post the full recipe here. But I'll describe what I did. First I cooked the rice noodle and topped each bowl with some thinly sliced beef. Then sprinkle A LOT of chopped green onion on top.

[Cook] Easy Tortellini

Easy Tortellini is something I would cook when I am feeling lazy. It's so easy that I don't even think a recipe is needed, and ANYONE can do this.


Easy Tortellini

You need store bought tortellini, store bought spaghetti sauce, shredded parmesan cheese, and some basil.  Cook the tortellini according to package direction, heat up the spaghetti sauce a bit and toss with cooked tortellini, sprinkle some parmesan cheese and basil on top, done!

[Cook] Chicken and Tri-Bell Pepper Chow Mein

This recipe came from Ming Tsai's Simply Ming One-Pot Meals: Quick, Healthy & Affordable Recipes. You can find a video of Ming Tsai cooking the dish HERE. This dish use very simple everyday ingredients. The result was amazing! It tastes like restaurant quality chow mein. Actually scratch that. It tastes even better than restaurant chow mein. I think the honey and lime in the recipe did the magic!


Chicken and Tri-Bell Pepper Chow Mein

1/2 pound fresh or dried chow mein or Shanghai noodles
Kosher salt
6 Tablespoons grapeseed or canola oil, plus more for coating the noodles
1 1/2 pounds boneless, skinless chicken breasts, cut across the width into 1/3-inch strips
3 Tablespoons minced garlic
2 Tablespoons minced ginger
1 bunch scallions, white and green parts, cut into 1-inch lengths
1/4 cup naturally brewed soy sauce
1/4 cup honey
Juice of 2 limes
3 small bell peppers, red, green, and yellow, cut into 1-inch dice
1 Tablespoon toasted sesame oil, for drizzling

這道鮪魚義大利麵做起來很簡單快速,只用了幾樣簡單的材料,就可以輕鬆的填飽肚子喔!


鮪魚義大利麵 Spaghetti with Sicilian Tuna Marinara

材料:
3大匙橄欖油
4瓣大蒜,切末
適量紅胡椒片(crushed red pepper flakes)
1罐鮪魚罐頭,去水
1罐(28 oz)番茄罐頭(crushed tomatoes)
適量西洋芹末(parsley)
1磅義大利麵(或是任何自己喜歡的麵),用加了少許鹽的開水煮熟

[Cook] Aglio Olio (Garlic and Oil Pasta)

這道以前做過了,真的超級超級簡易的,這天剛好家裡材料都有,就隨便又煮了一次,雖然簡單,但是味道真不錯呢!配上沙拉和麵包就是好吃的一餐囉!


超簡易蒜味義大利麵 Aglio Olio (Garlic and Oil Pasta)

材料:
1磅義大利麵
5顆大蒜,切末
1/4小匙紅胡椒 (就是那種灑在比薩上的辣辣紅胡椒)
1/4杯橄欖油
5小條anchovy鹹魚 (註:不知道台灣買不買得到,這是罐頭的鹹魚,加了鹹魚就不用加鹽,如果買不到就直接用鹽吧!)
1小把切碎的西洋芹 (parsley)
少許黑胡椒

[Cook] Simply Lasagna

這是我第一次做千層麪,沒想到做出來這麼成功,因為做太多,還特地帶到朋友家請他們吃,結果三個大男生把六人份的麵吃的光光的,讓我頗有成就感,其實千層麪做起來一點都不難,只是烤的時間比較久,大家有空的時候可以試試囉!



簡易牛肉起司千層麪 Simply Lasagna

材料:
1罐(15盎司)半脫脂乳清起司 part skim ricotta cheese
2 1/2杯莫澤雷勒起司絲 Mozzarella cheese
1/2杯帕爾馬起司絲 Parmesan
1/4杯西洋香菜末 parsley
1顆蛋,打散
1罐(26盎司)義大利麵醬
1磅牛絞肉,炒熟,去油
1杯水
12片千層麪

1磅義大利麵 (任何你喜歡的形狀都可以喔)
2大匙橄欖油
3顆大蒜,切末

很適合在大熱天吃的涼麵,做法很簡單,材料也都是在家平常都找的到的,方便又好吃呢!

[Cook] Pasta with Red Clam Sauce

這道義大利麵跟白醬蛤蠣義大利麵煮的很像,不過今天的是紅醬,紅醬的味道比較濃,白醬比較清淡,不同味道一樣好吃喔!


紅醬蛤蠣義大利麵 Pasta with Red Clam Sauce

材料:
1磅義大利麵
1/4杯橄欖油
3顆大蒜,切末
1/4小匙紅胡椒 (就是那種灑在比薩上的辣辣紅胡椒)
2小條anchovy鹹魚 (註:不知道台灣買不買得到,這是罐頭的鹹魚,加了鹹魚就不用加鹽,如果買不到就直接用鹽吧!)
1/2杯紅酒
1/2杯蛤蠣汁 (蛤蠣罐頭中的汁就可以囉!)
2大匙切歲的百里香 (thyme)
1小把切碎的芫荽 (parsley)
1罐(14 ounces)蛤蠣罐頭
1罐(28 OZ)壓碎蕃茄罐頭 (crushed tomatoes)

材料:
1磅義大利麵
1/4杯橄欖油
3顆大蒜,切末
1/4小匙紅胡椒 (就是那種灑在比薩上的辣辣紅胡椒)
2小條anchovy鹹魚 (註:不知道台灣買不買得到,這是罐頭的鹹魚,加了鹹魚就不用加鹽,如果買不到就直接用鹽吧!)
3/4杯蛤蠣汁 (蛤蠣罐頭中的汁就可以囉!)

[Cook] Pasta Puttanesca

這道義大利麵跟上次煮的有點像,大部分的材料都是上次用過的,加上一些別的材料後,馬上變成一道口味完全不一樣的好吃義大利麵,這道麵點也非常簡單,大概花個15分鐘就可以上桌囉!


蕃茄橄欖義大利麵 Pasta Puttanesca

材料:
1磅義大利麵
3顆大蒜,切末
1/4小匙紅胡椒 (就是那種灑在比薩上的辣辣紅胡椒)
2大匙橄欖油
4小條anchovy鹹魚 (註:不知道台灣買不買得到,這是罐頭的鹹魚,加了鹹魚就不用加鹽,如果買不到就直接用鹽吧!)
1小把切碎的芫荽
1罐(28 OZ)壓碎蕃茄罐頭 (crushed tomatoes)
2大匙續隨子花蕾 (capers)
8顆黑橄欖

簡單的雞肉炒麵,配上茉莉綠茶,就是好吃的一餐!

簡易雞肉炒麵 Pan-Fried Noodles

材料:
4人份的麵(選用自己喜歡的麵,我是用細義大利麵)
4塊雞胸肉,切成跟手指差不多大小條狀
4根蔥,切末
2顆大蒜,切碎丁
5大匙橄欖油
1/2小匙紅胡椒末(就是吃披薩會灑的那種紅胡椒)
3大匙醬油
2大匙檸檬汁

[Cook] Italian Mac-n-Cheese



義大利起司蘑菇臘腸麵 Italian Mac-n-Cheese

材料:
1磅管狀的義大利麵
1磅義大利臘腸 (也可用豬絞肉代替)
2大匙橄欖油
1大匙奶油
4顆大蒜,切碎丁
20顆蘑菇,切片

胡椒
2大匙麵粉
1杯雞高湯
1杯half-and-half (或用牛奶取代)
3杯起司絲 (選用你自己喜歡的起司)
1罐蕃茄丁罐頭,去水 (或用新鮮番茄切丁)
1小匙Tobasco辣椒醬 (不吃辣可不加)
1/2杯帕爾馬起司粉
