[Cook] Sloppy Joe

This recipe came from Everyday Food: Great Food Fast. I really like this cookbook. The book has 4 sections divided by season so all the ingredients in the section is in season and fresh. All the recipes were simple, using everyday ingredients, and tastes great. This recipe was supposed to make 4 servings of Sloppy Joe, but we had so much leftover I think it actually made 8 servings. I used the leftover with pasta, and it tasted great.

Soft buns work best with these classic kid-friendly sandwiches. Serve them with pickles or potato chips. The beef mixture can also be served over pasta.

Prep Time: 20 minutes
Total Time: 40 minutes
Yield Serves: 4

[Cook] Blue Cheese Covered Rib Eye Steak

I got some rib-eye on sale from the supermarket. We love rib eye steak. I could simply just grill it with some butter, and it is delicious that way. But I happened to have some blue cheese at home. So I searched online and found some blue cheese steak recipes. I made the rib eye steak with melted blue cheese on top, and it was super yummy. The steak was juicy and tender, and the cheese added tons of flavor!

INGREDIENTS:

2 rib-eye steaks
1/2 pound crumbled blue cheese
1/2 stick of butter, softened
1/4 cup unflavored bread crumbs
1/4 teaspoon minced garlic
1/2 teaspoon black pepper

[Cook] Grilled Round Steak Dinner

I bought some round steak from Ralphs. It was labeled as "breakfast style". I think this is the kind of  steak you get when you order "egg and steak" at breakfast joints. The steak was cheap, and it also tasted cheap. The meat was tough even though it was cooked to medium. I didn't like the steak AT ALL! But Dr. P didn't mind it. He still finished the whole plate. What a good husband! haha....

Grilled Round Steak Dinner

To cook the steak, I buttered a hot grilled pan, seasoned the steak with grill seasoning for steak, and grilled each side for about 5 minutes.

[Cook] Homemade Chinese Dinner

This was a Chinese dinner I made at home using what I had in the fridge.

Sauteed shacha beef, shrimp omelette, tofu stir-fry, and pig's ear from 99 Ranch Market.

[Cook] Pho Bo Beef

I bought this app called The Photo Cookbook on iPad ($4.99). There were 80 recipes with detailed photos on each and every step. All the recipes are quite easy and fast to make. The photo of each ingredients and all the steps help a lot. The first recipe I tried from this app was Pho Bo Beef. I never thought I could make pho at home. Turned out it wasn't as hard as I thought.

Pho Bo Beef

Because of copyright, I won't post the full recipe here. But I'll describe what I did. First I cooked the rice noodle and topped each bowl with some thinly sliced beef. Then sprinkle A LOT of chopped green onion on top.

[Cook] Trader Joe's Bool Kogi & Satay Peanut Stir Fry Vegetables

This another "semi-homemade" easy meal for lazy cook.

Trader Joe's Bool Kogi & Satay Peanut Stir Fry Vegetables

I was doing grocery shopping at Trader Joe's, and tried a sample of their Bool Kogi with the satay peanut veggies at the tasting station. I thought both the meat and vegetable tasted pretty good. So I bought them for dinner that night.

[Cook] [Slow Cooker] Corned Beef Dinner

I know it's really late, but this was our St. Patrick's Day's dinner. The recipe came from The Taste of Home Cookbook. I got the cookbook from Borders for only $5 from the bargain bin. Lucky find! I saw corned beef at Costco a week before St. Patrick's Day and almost bought it for about $5/lbs. Then I was doing grocery shopping at Ralphs and saw corned beef on sale for only $0.99/lb. I bought the 3 1/2 lb meat for $4 instead of $20. Another lucky find!  This recipe is really simple, and it turned out great. The corned beef was super tender. The vegetables were full of flavor, especially the cabbage. Dr. P has requested to have this dish every year for St. Patrick's Day.

Corned Beef Dinner
This traditional meal is a must for St. Patrick's Day but great any time of the year. A slow cooker makes it easy.

4 to 5 medium red potatoes, quartered
2 cups fresh baby carrots, halved lengthwise
3 cups chopped cabbage
1 corned beef brisket (3-1/2 pounds) with spice packet
3 cups water
1 tablespoon caraway seeds

[Cook] Glazed Meatloaf

Glazed Meatloaf

[Cook] Chili Burgers on Grilled Portobello "Buns"
