This was a super fast and easy dinner. I bought all ingredients from Fresh and Easy.
Salmon with Mango Salsa
Rice
Salmon
Olive oil
Garlic, minced
Asparagus, cut into 1" pieces
Mushroom, sliced
Prepared mango salsa
1. Start by cooking rice.
2. Season salmon with salt and pepper. Broil for about 8~10 minutes in oven.
3. Heat up some olive oil in a pan. Add garlic and cook for 30 seconds. Add asparagus. When asparagus is about half cooked, add mushroom. Cook until all vegetable is cooked. Season with salt and pepper.
4. When salmon is done, place on a plate and top with mango salsa.
Fast, easy, and healthy dinner served!
