Tex-Mex Corn Chip Chili & Apple and Celery Slaw with Blue Cheese Dressing

I came across Rachel Ray's Tex-Mex corn Chip Chili recipe, and it sounded so yummy.  The weather has been getting cold.  Perfect for a bowl of chili!


Tex-Mex Corn Chip Chili

The chili was very easy to make.  It only took about 40 minutes to cook, but it tasted like the chili has been cooking on the stove for hours.  Dr. P loves it, and he even said this was the best chili he's ever had.  I don't know if it is the "best" chili, but it did tasted pretty darn good!



Apple and Celery Slaw with Blue Cheese Dressing

I also made Apple and Celery Slaw with Blue Cheese Dressing to go with the Chili.  The recipe also came from Rachel Ray.  I don't have a coarse grater, so I cut the apple into thin strips myself.  That took quite some time.  But other than that, the recipe is fairly easy.  The blue cheese dressing tasted so good.  The dressing was perfect with crispy apple and celery.  Dr. P and I both enjoyed the salad a lot.

If you like chili, I highly recommend this recipe.  It tasted even better the next day!
