[Cook] Stuffed Poblanos

This one was a complete failure! I didn't find Poblanos pepper in my supermarket. So I just grabbed some similar looking peppers. This one was sooooo spicy. This whole dish ended up in the trash. *sign*



When I took it out of the oven, I immediately started coughing from the spiciness.... man it was horrible!!




In a blender, combine tomatoes in puree, jalapeno, half a onion, and garlic; puree slightly, you still want it chunky. Season with salt. Pour sauce into a baking dish; set aside.



In a medium bowl, combine black beans, cornmeal, cheddar cheese, remaining onions, cumin, and water; season with salt and pepper.



Cut poblanos in half lengthwise. Dividing evenly, stuff poblano halves with bean mixture and place on top of the sauce in baking dish. Sprinkle poblanos with remaining cheese.



Cover baking dish tightly with aluminum foil. Bake until poblanos are tender, about 45 minutes. Uncover, and continue to cook until sauce is thickened slightly and cheese is browned, 10 to 15 minutes more. Let cool 10 minutes.

Yikes! Will never ever attempt to make this again!!
