I usually make plan on what to cook for dinner the night before. I'll take a quick look at my fridge, freezer, and pantry, and think about what can I make from what I have. Then I would put the frozen meat in the fridge to defrost. It should be ready by the time I cook for dinner the next day. Last night's creation was turkey meatloaf. The recipe was adapted from Health Magazine, but I made some modifications to use ingredients I had on hand. The meatloaf came out really soft and moist. Success!
Turkey Meatloaf
1 onion, chopped
1 tablespoon olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon steak sauce
1/3 cup water
3 tablespoon ketchup
1 pound ground turkey
1/2 cup bread crumb
1 egg
1. Preheat oven to 375°. Heat olive oil in medium skillet over medium heat. Add onion and cook, stirring frequently, until soft, about 5 minutes. Add garlic, salt, and pepper; cook, stirring, 1 minute. Stir in steak sauce, water, and 1 tablespoon ketchup; transfer mixture to a large bowl, and cool.

2. Add turkey, breadcrumbs, and egg to mixture in bowl, and mix well. (Mixture will be very moist.)

3. Place turkey mixture into a loaf pan. Brush meatloaf with remaining 2 tablespoons ketchup. Bake 45 minutes or until thermometer inserted into center registers 170°. Let meatloaf stand 5 minutes before serving.
While the meatloaf was cooking in the oven, I cooked baby carrots for side dish. It was the $0.99 one pound bag of baby carrots I got from Ralphs this week.
1 pounds baby carrots
3 tablespoons butter, cut into small pats
1 tablespoon sugar
1 teaspoon coarse salt
Baby Carrots
Place baby carrots in 1/2-inch of water with butter, sugar, and salt. Bring water to a boil, cover pan, and reduce heat to simmer. Cook carrots 7 or 8 minutes, remove lid, and raise heat to medium high. Reduce water until it almost evaporates, a couple of minutes. Turn carrots in sauce and taste to adjust seasonings and serve.
I had leftover meatloaf for lunch today. I used hamburger buns and made meatloaf sandwich. It was yummy!

Try a little cumin seeds next time with the carrots. Seem to recall that you like cumin.
