[Slow Cooker] Chicken Braised with Ginger and Star Anise

This slow cooker recipe is really easy. An Asian household should have all the ingredients already. It looked like just nothing special chicken, but it was full of flavor. The sauce was delicious over rice. It only takes 2 hours in the slow cooker to make. Easy, fast, and tasty!

Chicken Braised with Ginger and Star Anise

Preparation time:  15 minutes
Cooking time:  2 hours
Serves 4

2 1/2 lb boneless, skinless chicken thighs
1 teaspoon sichuan peppercorns
1" piece fresh ginger, shredded
1/3 cup Chinese rice wine
1/4 cup low sodium soy sauce
1 tablespoon honey
1 star anise
3 scallions, thinly sliced diagonally

1.  Trim the chicken of any fat, then cut each thigh in half.  Put the chicken pieces, peppercorns, ginger, garlic, rice wine, soy sauce, honey and the star anise in the slow cooker.  Cook on high for 2 hours, or until the chicken is tender and cooked through.

2.  Garnish with the spring onions and serve with steamed rice.
