[Cook] Cod Provencal

This is another Rouxbe recipe. However, I messed up. I bought frozen cod from Trader Joe's. Somehow the fish burned within a minute after I put it in the stainless steel saute pan. It wasn't even cooked, but already burned on the outside. Also the fish just didn't taste right. Even the texture of the fish tasted funny. We ended up throwing everything away after a few bites. I don't think there's anything wrong with the recipe. Maybe I should use fresh cod and try this recipe again.


Cod Provencal

The cod had a panko crust. It was browned in a pan, then finished cooking in the oven. The ragout was made with garlic, tomatoes, edamame beans, olives, caper, white wine and basil. I think the leftover ragout would also go well with chicken or pasta.

  1. It might sound like a stupid question... but, did you defrost the fish before placing it in the pan? Most "fresh" filet fish in America are previously frozen anyway. I would think once the frozen fish is defrosted, this recipe would be good to go.

    Yup, I defrosted the fish in my fridge overnight.
    But the fish had a strong fishy taste, and the flesh had a rubbery chewy texture.
    It just didn't taste right. Maybe I got a pack that wasn't that fresh?

  2. Sounds like the fish was not fresh. I only bought the frozen fish at Trader Joe's once. It was a piece of tuna and didn't taste right either, especially the texture. No fresh fish would have a strong fishy taste...

    I bought frozen tuna from Trader Joe's before, and it didn't taste good, either.
    I don't think I'll be getting fish from them again.
    But I do love their other items though.

  3. sounds like your fire was too high. also, did u rinse the fish off before seasoning? that helps with the fishiness of frozen fish. fresh fish you don't have to do that.

    I was using a stainless steel pan so I heated it up for quite a while before adding the fish.
    (I saw in a video saying that if the pan is not hot enough, food will stick to it.)
    Maybe I heated way too high. Yeah, I rinsed the fish, but it was still fishy.
    I think I'll just go for fresh fish next time.
