Bento Everyday

"The economy is so bad" seems to be the hot conversation topic lately.  I am also affected by the bad economy.  Got the news that I will be laid off at the end of March.  Oh well, guess I'll just try to find another night job.  If not, I'll go to school full time in April and May.  Then I'll find another full time job starting in June.  In the mean time, I don't want to be too stress about it.  But in order to save money, I've been a good girl and bringing my bento to work everyday.

Taro cake with some garlic chili sauce.  Meatball with enoki mushroom and cabbage.  I really like the meatball from IKEA.  You can cook it in so many different ways.

Lots of different food in this small bento box.  Shrimp with garlic and cilantro sauce.  Sauteed lamb with green onion.  Cantonese style sausage and roasted pork.  More meatball with mushroom and cabbage.  I just love the Cantonese style sausage.  You can buy the sausage at any Cantonese BBQ restaurant.

Leftover is always good for bento.  We went to Black Angus the night before.  So everything was leftover from Black Angus dinner, except the Cantonese sausage.  There were buffalo style fried chicken and baked potato skin with cheese and sour cream from the appetizer sampler.  Some leftover prime rib, too.  Strangely, rice actually went really well with the food.

My parents love John's Kitchen's dumplings.  They bought 300 frozen dumplings with different fillings!  We always have some frozen dumplings in our freezer.  These make a quick lunch/dinner/snack anytime.

Peanut Butter Sauce by you.
Peanut Sauce

A coworker brought some Vietnamese style peanut sauce the day before.  I tried it and told him how much I love the sauce.  So the following day he brought me some more sauce.  So nice!  The sauce was made with peanut butter, soy sauce, lemon juice, fish sauce, garlic, cilantro and green onion.  Perfect with my dumplings, too.

Still had peanut sauce leftover.  I cooked some spaghetti and tossed the pasta with the sauce.  It was simple and yummy.  Also brought some IKEA meatballs and sauteed cucumber for some protein and fiber.

Pizza and rotisserie chicken from Costco.  Love both items from Costco.  Brought a little broccoli for some veggie.

My mom's famous soy sauce braised pork ribs!  Just can't enough of it!!  Sauteed eggplant and some Chinese broccoli.  Super delicious bento!  Just love my mom's cooking.

There, lots of bentos.  It really save tons of money to bring your own lunch/dinner to work.  Time to find a new job!

    Yeah, some of my coworkers are so stressed out about it.
    Everybody is worrying about finding the next job....

  7. Sorry to hear about the laid off....I wish that I can send you some postings from LA County but we just implemented a hiring freeze.....

    It does save quite a bit bringing lunch to work from http://www.eileenlikestoeat.com. Last night I cooked a simple ground beef sauted with diced red onion and green bell pepper in Sha Cha sause. It's enough for 5 lunches over steamed brown rice. At $1 a lunch, it's money saving and healthy, not to mention leaving me time to do a 30-minute workout in my work's conference room.

    Keep it up and chin up. Good things will come to those who are prepared.

    maybe by the time, they'll change their mind about laying off a such wonderful worker? you never know and things might even get better after this!! keep it up!
    as for bento, I've been a good boy for cooking/bring own lunch boxes daily now! I'll do a big pot of 肉燥/控肉 or a pot of 滷雞翅 for the whole week and will just sautee veggis on the side daily!
    I would also make some 涼拌黃瓜 蔥扮豆干等小菜, those are for when I am hungry for some noodles or dumpling to eat with!

  10. Sorry to hear about the job Eileen. Sometimes things turns out for the better in the long run. I wasn't working for awhile last year and I enjoyed my free time (first break since College) and now, I enjoy my job A LOT more. 不管這樣希望你好好加油! :)
