I have a lot of cookbooks. I mean... A LOT! I read cookbooks cover to cover... for fun. Then I put them on my bookshelves... for decoration. But what's the point of buying cookbooks if I am not going to cook anything from them? So yesterday I picked one of the book from my bookshelf, and randomly turned to a page, and that was going to be dinner. The book I picked was Rachel Ray's Express Lane Meals. Every recipe in the book can be done under 30 minutes. I like fast and easy recipes. The page I turned to was Chicken, Chorizo, and Hominy Stoup.
Chicken, Chorizo, and Hominy Stoup
A "stoup" is a dish between soup and stew. I used andouille sausage because I couldn't find Chorizo at Sprouts Farmers Market. I was afraid that the sausage might make the stoup too greasy, but not Sprouts all natural andouille sausage. It was a very lean sausage and full of flavor. There were a lot of vegetables in the stoup, onion, celery, kale, and hominy. Hominy is this giant corn kernel. I found it at the Mexican aisle in the supermarket. This stoup was pretty spicy because of the chipotle pepper in adobo sauce. Dr. P loved the spicy stoup. I like the flavor of cumin and coriander a lot.
We had the stoup with a glass of white wine, a plate of salad, and some French bread. I toasted the French bread, and we dipped the bread with the soup. It was so filling and satisfying!
Dr. P came http://www.eileenlikestoeat.com from work, and was very happy to see what was on the table. He was like "This is what I am talking about!"
I could only finished half of my stoup. So Dr. P not only finished his own plate, but he also finished mine.
Then he finished his salad.
Finally he even finished all the bread!
He woke up this morning, and first thing he said was "I want some of that stoup!" Having him loving the food that much has made my cooking experience more enjoyable than ever. ^^
P.S. You can find the recipe HERE.
P.S.S. Or you can try a simpler version, Chorizo and Hominy Soup.

Oh yeah.... filled with love. haha...
Thanks very much for the link to the recipe. I made the stoup yesterday and it's just amazing! I probably wouldn't have tried it without your idea of substituting andouille for chorizo sausage. I can't stop eating it even though I am completely stuffed! Next time I am going to experiment with tofu instead of chicken.
ReplyDeletehaha I showed Dr. P your comment, and he said he felt exactly the same way.
He was so full but couldn't stop eating it. I like the stoup a lot.
It's very fulfilling, and healthy too. The andouille sausage was lean.
There was no oil on the surface of the soup at all. Love this dish! I'm glad you like it too!
