Since I started taking my animal classes and working with them at the school farm, I decide to eat less meat. I searched for vegetarian recipes on Vegetarian Times. The Brazilian Black Bean Stew with sweet potato and mango seemed delicious. So I decide to give it a try. It was indeed very delicious. It's also very easy to make. And one thing I love about cooking vegetarian food is the easy clean-up.
For the recipe, I took pictures for every step to show you how easy it is to make. My cooking style is prepare along the way and clean about as you go. I think you save more time cooking this way. If you don't like this way, prepare everything first before you start cooking. Enjoy!
Here are all the ingredients. 1 onion, 2 cloves of garlic, 2 sweet potatoes, 1 red bell pepper, 1 can diced tomato, 2 cans black bean, 1 mango and cilantro.
1 onion.
Chop the onion. While chopping, add some oil to a pot and heat it up.
Sauteed chopped onion in oil for about 5 minutes.
2 cloves of garlic.
Mince the garlic while the onion is cooking.
Add the minced garlic into the pot and sautee for about 1 minute.
2 sweet potatoes.
Peel and chop the sweet potatoes. I started this step after mincing the garlic while the onion is still cooking.
1 red bell pepper.
Remove the seed and chop the red bell pepper.
1 can of diced tomatoes.
1 hot green chili pepper. This one is optional. I like a little heat in my stew. Also this chili pepper is from our backyard. My dad's proud work.
Chop the green chili pepper. If you don't want too much heat, remove the seeds.
1 1/2 cup of water.
Add sweet potato, red bell pepper, diced tomato with juice, green chili pepper and water to the pot. Cover the pot and simmer for 15 minutes.
2 cans of black beans.
Rinse the bean with water and drain.
Add the black beans to the pot and simmer for 5 minutes.
1 mango.
Peel and chop the mango. Plenty of time to do this while the stew is simmering before adding the black beans.
Add mango to the pot and simmer for another 1 minute.
Some cilantro.
Chop the cilantro.
Last step. Add the chopped cilantro and mix. Oh yeah, don't forget to season with salt to your taste.
Tada! Finished!
I love the Brazilian Black Bean Stew. I never had mango in a stew before. Surprisingly it went so well with the whole stew. The sweet potato, black bean, red bell pepper and tomato mix was very delicious and satisfying. I had the stew with some tortillas. My family all love the dish as well. It's also low fat and healthy. This dish is perfect dinner for a chilly autume night.
